Culinary and circular
Culinarity and circularity go hand in hand, and that is something we at De Zeeuwse Stromen firmly believe in. We are guided by conscious choices. For example, the liqueur Orangecello (Dik & Schil) on our drinks menu is made from the orange peels that we do not throw away when we squeeze fresh orange juice.
And those delicious oyster mushroom croquettes from De Ambachterie? The filling is made from oyster mushrooms grown on coffee grounds. The coffee grounds we keep are collected once in a while, combined with a delivery of course, by our supplier Bidfood. The Amsterdam-based company GRO then grows oyster mushrooms on it. The circle is complete...
